Guinness Beer Battered Fish & Chips

In the spirit of the Irish festival this weekend, Executive Chef Michael Conetta from Waterman Grille shared the recipe for his Guinness Beer Battered Fish & Chips this morning on the Rhode Show!

Yield: 4 servings

Ingredients:

Guinness 1can
Egg White, lightly whipped 1each
Milk, whole 2/3 cup
Canola Oil 1tsp
Baking Powder 1tsp
Cayenne Pepper, ground ¼ tsp
Salt, kosher ¼ tsp
All Purpose Flour 1-1/2 cup
All Purpose Flour for Dipping ½ cup
Canola oil for Frying 4 cup
Russet Potatoes cut into wedges
2lbs Fish (Cod, Pollock, Halibut, ect…)

Directions:
1. Pat potato wedges with paper towels to remove extra moisture and reduce splattering when frying. Add wedges to deep fryer when the canola oil has reached the appropriate frying temperature of 375 degrees F.
2. Remove potato wedges from the canola oil with slotted spoon when they reach a golden brown color, drain them on paper towels, and season to taste.
3. To prepare batter, mix together beer, egg, milk, and canola oil. Add baking powder, cayenne pepper, salt and flour all at once, mixing only enough to dampen the dry ingredients.
4. Coat fish pieces in flour before dipping fish in batter and place in 375 degrees F canola oil to deep fry. Cook until golden, about 6 minutes. Remove from canola oil with slotted spoon, drain on paper towels. Serve immediately.

A Breed with a Brogue

The great Newport Waterfront Irish Festival is ready to step-dance its way back into your hearts & bellies starting tomorrow!  Local lore ensures that everyone in town knows only here you can learn to pour the perfect pint, eat great food, and enjoy some seriously shamrockin’ entertainment, but did you know that Guinness is celebrating its 250 anniversary at the festival?  Or that there will be a Celtic fashion show?  Or, even better, you could be lucky enough to cross paths with a real Irish WolfhoundAlmost as legendary as the unicorn or a blogging bird, these beautiful canine beasts will be on hand to help celebrate all things Celtic!

Though an exact point of origin has yet to be identified, the Irish Wolfhound is an ancient dog breed that is still shrouded in some degree of mystery and legend. Nearly made extinct in the mid-19th century due to its popularity among royalty, the Irish Wolfhound was slowly re-bred and its numbers again grew.  Visit here to learn more about this canine conundrum featured at the festival.

Enjoy the holiday weekend!  Hope to see you at the festival!

Odds & Ends

A few things to share with you all before one of the last official weekends of summer:

nyco9_06

1.  What are the odds you should make it to the Newport Arts Festival this weekend?  Good,  according to Providence Business News and Rhode Island Monthly e-newsletters.  Both magazines named the festival the #1 and #3 thing to do this weekend, respectively.  Who are we to argue with two of the biggest publications in the state? Stop on by to see how a creative mentality and unique viewpoint has made a whole slew of homegrown artists  successful. And don’t forget, there is a special concert there on Saturday night, featuring Avi & Celia and Twist of Fate.

2. If you missed our wee reminder earlier this week,  your chance to get advance discounted tickets for the Newport Waterfront Irish Festival ends today, August 28th.  Unfortunately, if you don’t buy them now, the luck of the Irish will not be with you come ticket-taking time, so print your tickets ahead of time and beat the lines!  Everyone else will be jealous as you whisk easily to the Guinness Gig Rig, with perfect pint in hand and not a care in the world.

May the lilt of Irish laughter lighten your every load, me dears! Until next week!
